The complete story on The Macallan Fine Oak

We wanted to share with you the story of The Macallan Fine Oak expression and its link with Spain. Our Fine Oak single malts are Triple Cask Matured in a unique, complex combination of Exceptional Oak Casks: European oak casks seasoned with sherry made from wood from the forests in northern Spain, American oak casks seasoned with sherry, and American oak casks seasoned with bourbon.

It has won multiple awards including Best Whisky at the Ultimate Beverage Challenge earlier this year, and our 10 years old Fine Oak has also gained top marks for cocktails. No surprise too that it is often the recipient of enthusiastic reviews by readers like yourselves on Connosr (see here and here for a couple of our favourites). Of course, none of this would happen if it weren't for its peerless quality.

The story begins in the ancient forests of Galicia, Cantabria and Asturias in northern Spain. Using the rich timber of these forests, staves are hand-fashioned in the Province of Cadiz. The casks are then hand crafted and toasted in the cooperages of Jerez before being filled with aged sherry and left to season for up to two years. A portion of our American Oak also travels to Jerez, where it is hand-crafted into casks, filled with sherry and left to season for up to eighteen months.

Across the Atlantic, the story continues as American oak casks are made from timber from the age-old woodlands in Ohio, Illinois, Kentucky, Indiana and Arkansas. These are hand-crafted and charred in the cooperages of Kentucky to then be filled with premium bourbon and left to season for up to eight years.

Eventually the casks are emptied once their respective liquid contents have matured and then travel to The Macallan distillery in Speyside, Scotland, where they are filled with clear, distinctively rich Macallan 'new make' spirit. Each cask, depending on whether it has been crafted from European or American Oak, and been seasoned with sherry or bourbon, will affect its content in different ways.

The unique attributes of each cask and our unwavering commitment to natural colour presents Bob Dalgarno, The Macallan Master Whisky Maker, with the complex challenge of ensuring consistency in quality, character and colour year after year. To achieve this, Bob and his team sample thousands of individual casks to select those that will finally be married together prior to bottling.

The Triple Cask Maturation results in a Single Malt with more refreshing, citrusy flavours and a lighter colour than the classic sherry oak range. But this does not mean it has less depth or complexity, far from it. Flavours of orange, chocolate and vanilla combine to create a whisky that is ideal for those warmer summer evenings.
