The Importance of Wood

Grounded in an unwavering commitment to sourcing the very best sherry seasoned oak casks (the most expensive in the industry) here at The Macallan we pride ourselves on the quality of the wood that goes into making us one of the world’s truly great single malts.

The Macallan from Tree to Cask

The distinctive character of the final whisky, reckoned to account for some 60% of the final aromas and flavours of The Macallan, comes from the interaction of the Macallan’s fine new make spirit with the wood, previously seasoned for up to two years with sherry. But don’t take our word for it, hear our very own Stuart MacPherson, Master of Wood, explain the importance of wood in creating the final Macallan product...

The Macallan Master of Wood: Stuart MacPherson

Stuart is responsible for the day to day running of the cooperage, production planning and ensuring we receive casks that meet our exacting quality standards. Sustaining the highest quality approach to wood sits at the very heart of The Macallan, which is shown in the recent launch of The Macallan 1824 Series. The casks chosen for the range deliver a gradation of colour from light to dark, with the wood character defining each expression’s flavour, moving from lighter, lemon citrus to richer, dried fruit notes.   As the whiskies become darker and richer, so the pool of casks able to deliver this character becomes smaller and rarer.

  • The Macallan imports more new sherry seasoned oak casks than the rest of the Scotch whisky industry combined
  • A sherry seasoned oak butt costs nine times more than a bourbon seasoned oak barrel
  • The Macallan has 173,000 casks maturing at the distillery
  • It takes 60 months from the felling of a tree to it receiving the Macallan’s new make spirit
  • We replace every tree felled with at least one new tree to ensure a sustainable production
