Joan Roca

Our latest collaboration, The Macallan Masters of Taste, pairs us with world-class innovators Joan, Josep and Jordi Roca. With an exceptional commitment to their craft, it is no surprise that their restaurant El Celler de Can Roca was voted the world’s best in 2013.

Joan and Josep Roca founded the restaurant in August 1986, in Girona and Jordi Roca joined his brothers in 1998, completing the full line up that we know today. At the heart of El Celler de Can Roca is Joan Roca, the eldest of the brothers.

Having been academically trained at the “Escola d’Hostaleria i Turisme” in Girona, Joan is considered one of the best and most influential chefs in the world.

Joan’s passion for cooking is unsurprising considering his family has been immersed in the restaurant trade for many generations. Having grown up around committed chefs, Joan’s love of creating innovative dishes began at a young age and over the years he has honed his craft to perfection.  Joan’s exquisite cooking combines traditional cuisine with molecular gastronomy techniques.  It is this unwavering commitment to producing new and exciting dishes that has earned Joan, along with his brothers, their distinguished reputation.

Joan’s world class culinary creations and strong work ethic placed him in a prestigious spot on the 2011 list of the ‘20 most influential chefs in the world’. This title was the latest in a string of international acknowledgments, having previously been crowned Chef of the Year by the Spanish Academy of Gastronomy.  

You’d be wrong to think that Joan’s impressive talents begin and end in the kitchen. In recent years he has published several cookbooks, including one focussed on cooking in a Roner Vacuum, a device which regulates cooking temperatures and ensures dishes retain their natural flavours. Joan co-developed the Roner vacuum with Narcís Caner and it is now an essential tool in great restaurant kitchens worldwide.

El Celler de Can Roca produces impeccable, unrivalled dishes thanks to Joan’s culinary creativity.  Signature dishes include caramelised onions presented on a bonsai tree and crayfish reloutéaccompanied with spring onions, cocoa and mint.
