The The Masters of Spirit

The foundation for all Macallan lies with the ‘new make’ spirit; from the quality of the barley, to the soft spring water from boreholes on The Macallan estate, to the final distillation in our curiously small spirit stills – the smallest on Speyside.

Over 40 farmers exclusively grow Minstrel barley for The Macallan. Low in nitrogen and high in starch it contributes to the characteristically rich, oily character of the ‘new make’ spirit, so important for long wood ageing, especially in Spanish oak casks.

The unique size and shape of our stills gives the spirit maximum contact with the copper, helping to concentrate the ‘new make’ spirit which, combined with the finest cut that takes only the best 16% from the distillation to fill to cask, provide those rich, fruity, full-bodied flavours so characteristic of The Macallan.

The The Masters of Wood

The Macallan’s oak maturation casks are the single greatest contributor to the outstanding quality, natural colours and distinctive aromas and flavours of The Macallan.

We control the whole journey from forest to cask for both our Spanish and American oak sherry seasoned casks, and buy only the best of barrels from premium bourbon producers.

A study commissioned exclusively by, and for, The Macallan showed that the casks account for some 60% of the final aromas and flavours, so we invest heavily in sourcing, crafting, seasoning and caring for our casks. The Macallan alone accounts for some 65% of fresh sherry seasoned oak casks, the most expensive of all, imported into Scotland for maturing whisky.

New for 2014 – The Six Pillars Tour

Much like our curiously small stills, our small groups are limited to just 10 people to ensure a luxurious, personal experience. Your friendly and knowledgeable guide will explain how we create The Macallan's rich spirit in a working still house and introduce you to the ‘Six Pillars’.  You will learn how our unparalleled investment in the finest casks contributes to the natural colours, aromas and flavours that set The Macallan apart. After a thorough immersion into the world of The Macallan, you will experience a nosing and tasting of four The Macallan whiskies as well as their very foundation, our wonderfully rich new make spirit.

Tour duration: approx. 1 hour 45 minutes.

We are delighted to inform you that work is underway on our new distillery which is due to open in 2017.  In order to minimise disruption to your visit, and to keep visitor and construction traffic separate, a new entrance to the distillery is available on the B9102.  This is clearly signed for visitors to the estate.  The new entrance will take you to parking for the visitor centre for your tour.  We look forward to welcoming you.
