    United by an insatiable curiosity, quest for knowledge, and dedication to innovation, The Macallan has collaborated with El Celler de Can Roca to launch a new permanent dining experience at The Macallan Estate - TimeSpirit.

    Together, we have crafted a dining concept that is a culinary exploration and playful expression of The Macallan’s story. A pinnacle of culinary excellence in Scotland, TimeSpirit pays tribute to our past and marks an exciting new chapter as we look forward to the future. ​

    Cost: The six course lunch tasting menu is £75 per person. The nine course dinner tasting menu is £105 per person 

    Frequency: Reservations available Thursdays and Fridays until the end of September and Saturdays and Sundays until 13 December 2026.

    TimeSpirit at The Macallan Estate marks the next chapter in our gastronomic journey and El Celler de Can Roca's first dining concept outside of Spain. 

    Over three decades on from the creation of El Celler de Can Roca and inspired by our long-standing partnership of twelve years, The Macallan Estate was identified as the natural location for their international culinary venture debut.

    Together with The Macallan, they have travelled through Scotland, understanding its culture, learning its customs and marvelling at its amazing produce. The Macallan and El Celler de Can Roca share a perpetual drive for innovation and commitment to the continuous growth and evolution of our shared journey. Together, we have crafted a culinary experience that is a collective expression of our playful spirit, creativity and respect for nature.

    THE MENU

    In collaboration with El Celler de Can Roca, The Macallan has crafted a unique dining concept and exceptional tasting menu. The tasting menu is a sensory immersion and artful articulation of The Macallan’s legacy, our dedication to mastery, community spirit and the natural world that surrounds us.

    We are proud to source the finest local ingredients taking inspiration from Scotland's abundant natural larder. 

    Each dish is curated with seasonal, local produce, either foraged from The Macallan Estate or sourced from local suppliers. As custodians of our precious land, we seek to work in rhythm with the natural seasons.

    THE SPACE

    Designed by award-winning architect, David Thulstrup, TimeSpirit is a space reimagined to create the ultimate gastronomic dining experience and immersion in nature at The Macallan Estate. 

    The dining experience is centred around the kitchen, occupying the middle of the room which provides guests an intimate showcase of our creative culinary process. The abundance of natural light and the sweeping views onto the rolling hills of Speyside reflects our inspiration rooted in nature. 

    Our single malt whisky occupies the heart of the dining room, where exclusive expressions are housed in a unique oak-panelled cellar space. Surrounding this is a selection of fine wines and sherries curated by Josep Roca, award-winning sommelier of El Celler de Can Roca, set against a striking backdrop inspired by the Albariza soil of Jerez.​
