A local twist on a naval classic as a salute to the sailors who transported The Macallan’s Sherry Seasoned Oak casks from Jerez, Spain to Speyside, Scotland.

The Speyside Flip
Created by the team at The Macallan Bar, this indulgent serve is an antidote to the winter season.
Ingredients
- 1 whole egg
- 40ml milk stout
- 20ml Pedro Ximenez sherry
- 10ml orange oleo
- 40ml Sherry Oak 12 Years Old
- Dark chocolate, grated (optional)
Method
- Crack whole egg into small side of tin shaker
- Add 40ml milk stout
- Add 20ml Pedro Ximenez sherry
- Add 10ml orange oleo saccharum
- Add 40ml Sherry Oak 12
- Shake without ice then shake with ice
- Double strain in Calabreze glass
- Garnish with grated dark chocolate
