Rich Dried Fruits. Ginger Spice. Wood Smoke.

Laying undisturbed in the same casks for a quarter of a century, this distinguished single malt is matured exclusively in Oloroso sherry seasoned oak casks from Jerez, Spain. During this time the maturing spirit transforms to create this luxurious single malt whisky characterised by its rich flavours of vanilla, dried fruits and ginger spice with a long finish and rich mahogany colour.

Sourced, crafted, toasted and seasoned under the watchful eye of the Master of Wood, the hand-picked casks are delivered to the demanding specifications of the Whisky Mastery Team. It is the oak that makes the greatest contribution to the quality, natural colour and distinctive aromas and flavours at the heart of this single malt whisky.

Once filled, the maturing spirit remains undisturbed in the same casks for the necessary number of years it needs to be worthy of its destined Macallan expression. Sipping Sherry Oak 25 Years old neat allows it to coat the palate with its depth of flavours - which are then intensified by the citrus notes from the olives and the intensity of the Jamon. Take a piece of Iberico followed by nosing and sipping the whisky and finish with an olive - the salty bonus of the meat opens the palate, the whisky glides over the tongue soaking up the meaty flavours leaving the freshness of the olive to round off the palate.
