For the first time in our history, we own and oversee every key step of our sherry cask journey, from oak sourcing to maturation. By bringing together generations of expertise and craftsmanship, we uphold the uncompromising standards that have defined The Macallan for over two centuries, helping to safeguard our Signature Taste for the future.

    Our six stagesof ownership

Ownership from origin is built on the six key stages that influence sherry cask quality, each shaped by specialists whose expertise has been refined over generations. From sourcing oak in the forests of North America and Europe to making and seasoning the casks in our cooperages and bodegas in Jerez, every stage plays a vital role in protecting the quality, character and provenance behind The Macallan's exceptional sherry casks.

By owning these key stages, we strengthen traceability, safeguard traditional craftsmanship and preserve the provenance, expertise and character behind every sherry cask.

    Oak Sourcing

We carefully select American and European oak for their exceptional quality and character.

Coopers Oak in the US and Tevasa Forestal in Spain, long-standing partners and now part of The Macallan, bring generations of expertise to sourcing exceptional oak and quarter-sawing it into staves.

We preserve the quality and provenance of the oak that will ultimately shape the flavour, natural colour and character of our whisky.

Following careful selection, the oak undergoes years of natural drying, first at our sawmills and later under the Andalusian sun in Jerez de la Frontera, Spain.

During this time, the moisture in our staves is gradually released, harsh green tannins soften and the oak develops the character and complexity which is fundamental to our final Signature Taste

In our cooperages in Jerez de la Frontera, Vasyma and Tevasa, experts in American and European oak respectively, generations of expertise guide skilled artisans as they carefully shape individual oak staves and transform them into casks that will help shape the character of our whisky, using heat, water and traditional coopering techniques.

The journey continues in our vineyards in Jerez de la Frontera, where the world's most exceptional sherry wines are crafted.

Through Grupo Estévez and Valdespino, now also part of The Macallan, and the largest owner of vineyards within the Sherry DO, we can draw on a diverse range of vineyard sites and flavour profiles to create bespoke sherry wines crafted exclusively for The Macallan. These wines play a vital role in preparing our casks for their final destination, Scotland.

The relationship between oak and sherry is central to our character. In our own bodegas in Jerez de la Frontera our bespoke Valdespino sherry wines season each of our casks.

As the wine rests within the oak, it softens tannins and imparts layers of character that will later contribute to the flavour, aroma and natural colour of our whisky. This process is not guided by time but by knowledge.

When the casks are ready, they travel to Speyside where they will meet The Macallan's new make spirit.

    Maturation

    A slow,patient maturation

In Speyside, the final stage of the cask journey begins. Filled with new make spirit, each cask embarks on a long and patient maturation, where time, oak and spirit work in harmony.

Our Whisky Mastery Team carefully monitors each cask, assessing its development and determining when it has reached its optimal point of maturity.

Through this slow interaction with sherry-seasoned oak, The Macallan develops the natural colour, complexity and Signature Taste that define our whisky.
