    In celebration of 200 years of The Macallan, the Roca brothers, owners of El Celler de Can Roca, twice named Best Restaurant in the World, draw inspiration from our origins, as well as our innovation, craftsmanship, love for nature, and homage to our roots to craft an exclusive 16-course menu centred around the concept of time. A journey from our past to our future.

    The gastronomic experience not only highlights excellence in cuisine and distillation but also underscores the values of innovation, respect for nature, and a relentless pursuit of perfection - the values the Roca brothers share with The Macallan.

    TimeSpirit is a way to push the limits of what is possible. ​

    We can integrate the architecture by recreating a building and transforming it into a dish which contains surprises inside, homages to The Macallan’s endeavours. Homages to the architecture, sustainability and beauty in form of smalls starters.​

    Looking back is necessary to head towards a better future.​

    The Menu

    Embark on a journey through time in which the Roca brothers, as time travellers, guide you through a gastronomic visual experience of our story turning 200 Years Young.

    The film showcases the inspiration and development of an innovative menu at El Celler de Can Roca. This menu incorporates ancient and forgotten culinary techniques that the restaurant has rediscovered and reinvented, resulting in a menu unlike any previously offered by the Roca brothers.

    Each of the dishes is a Time Machine capable of taking us to the past, the present, and the future of The Macallan, through the artistry of the Roca brothers.

    The 16-course menu, experienced in an exclusive event at El Celler de Can Roca in Girona, served as an inspiration for the menu at The Macallan Estate - TimeSpirit, featuring nine exceptional dishes.

    "It’s an offering related to the passage of time, travelling through time, understanding the heritage, its legacy, but I think it should also be related to innovation. ​ A transfer between heritage and innovation.
    The menu we have created is a nod to the future where acknowledging the past is essential while forging new pathways.​ We’ve taken on a challenge to open pathways we haven’t yet explored.​ The Macallan has always travelled through time."
