The Harmony Collection Rich Cacao Whisky Pairing

With sustainability at the heart, The Macallan Harmony Collection Rich Cacao is an exploration and celebration of the complementary worlds of whisky and chocolate. In collaboration with the Roca brothers and Casa Cacao hotel and chocolate factory, this limited edition whisky presents a wonderful pairing experience. 

Inspired by her time at the hotel and chocolate factory in Girona, Spain, The Macallan Whisky Maker Polly Logan created Rich Cacao with distinct flavours and aromas reminiscent of chocolate.

The Journey of Flavour

Inspired by one of Casa Cacao’s chocolates, the spiral on the packaging represents the journeys encompassing this release: the journey of sustainability, our longstanding partnership with the Roca brothers, and the layers of flavour within the whisky itself.

The colour of Rich Cacao is reminiscent of toasted cocoa beans, and the aroma is of deep chocolate fondant. On the palate is dark chocolate, which softens into honey, sticky dates with vanilla and cinnamon.

The word harmony, that means something, the harmonious journey, and that journey is a structure of flavour. They have to feel that harmony themselves. Combining the flavours of the whisky, and combining the flavours of the chocolate. It’s fun to see that marriage, that harmony in how they join together.

Jordi Roca and his team at Casa Cacao were inspired by The Harmony Collection Rich Cacao to create bon bon chocolates that would complement the flavour notes of the whisky in a rich pairing experience. 

With sustainability as a core tenant of their production, they work with cacao farmers to ensure that the ingredients used are grown and sourced responsibly, with every step traceable. Their bean to bar approach shows respect for the communities, climate and natural processes that went into the life of the cacao bean. 

Chocolate Pairings: Source Locally

To create this pairing ritual at home, we recommend that you select high quality, fairtrade and traceably-made chocolate from a producer that uses a bean-to-bar approach.  

Casa Cacao recommend a dark chocolate with Forastero/Trinitario type of bean, which is a purple bean that gives nice acidity, and a clean expression of red fruit. Select chocolates with a light toasted nut finish, and avoid chocolates with high astringency.

These chocolate notes match with The Macallan Harmony Rich Cacao due to the almond and honey notes, and the chocolate itself brings the acidity and the red fruit notes

The Pairing Ritual

There are three steps to The Harmony Collection Rich Cacao whisky and chocolate ritual to create the perfect sensorial experience for this expression at home.

1. Take a sip of Rich Cacao and enjoy the chocolate notes of this expression.

2. Then take a bite of the chocolate to discover the unique flavour combination.

3. Complete the ritual with a second sip of Rich Cacao for the perfect finish.

Working with The Macallan is a pleasure. Chocolate and whisky, it’s a marriage made in heaven.
