Around the world, people are still celebrating the night, but here, we’re witnessing the first light of the New Year. It’s a moment of stillness, hope and renewal, when New Zealanders gather on the shore and feel the collective emotion of welcoming new beginnings, and looking forward to the future.
To capture this moment, we’ve created the The Macallan First Sunlight Serve.

The Macallan A Night on Earth - The First Light
Inspired by the vibrant spirit of New Zealand's festive traditions, the First Sunlight celebrates the fruity character of The Macallan A Night on Earth - The First Light.
Notes of peach and citrus shine through, complemented by a playful foam that nods to pavlova, a dessert at the heart of New Zealand's festive traditions. A touch of popping candy, bringing a burst of excitement, just like the fireworks of New Year's Eve. The serve's golden hue reflects the rising sun over Gisborne, the easternmost city to welcome the dawn.
To complete the experience, we serve the cocktail with a bite-sized peach pavlova - a tribute to both the whisky's tasting notes and the iconic desert.
Make the serve
Step 1
Add all ingredients except soda to a shaker.
Step 2
If using egg white, shake vigorously without ice (dry shake), then add ice and shake again.
Step 3
Double strain into a highball glass with an ice spear.
Step 4
Wait about 15 seconds to let the foam settle.
Step 5
Top with soda water.
Step 6
Garnish with popping candy and redcurrants.

Peach Meringue with Toffee and Vanilla
The combination of ripe peach, rich toffee and smooth vanilla ties directly into the tasting notes of A Night on Earth - First Light, offering a final flavour within the experience.
Add a toffee base for depth and richness.
Add hint of vanilla into the meringue.
Top with a thin slice of fresh peach.
Serve chilled on a minimalist platter.
